Polish Golabki

Cultural Context

Golabki, or stuffed cabbage rolls, have deep roots in Polish cuisine, often associated with family gatherings and festive occasions. Traditionally, they are made with a filling of meat and rice wrapped in cabbage leaves, then baked in a savory tomato sauce. This dish symbolizes comfort and home, and while it is a staple in Poland, variations can be found across Eastern Europe, each with its unique twist on the filling and sauce.

1

Heat water in a large pot until hot but not boiling.

2

Add the whole head of cabbage to the water and cook for 8 minutes, turning occasionally.

3

Remove the cabbage and cut a square around the core to make it easier to remove the leaves.

4

Peel off the soft cabbage leaves and cut out the thick stem from each leaf.

5

Set the leaves aside to cool.

6

Chop and dice a medium onion and 4 basil leaves, then chiffonade the basil.

7

In a large pan, add 2 tablespoons of avocado oil and heat it up.

8

Add the diced onions and cook until golden, then scoop out half and set aside.

9

To the remaining onions, add 3 minced garlic cloves and stir for 15 seconds.

10

Pour in 2 tablespoons of white wine vinegar and stir.

11

Add 1 28-ounce can of crushed tomatoes and 1 8-ounce can of tomato sauce.

12

Season with 1 tablespoon of thyme, 1 tablespoon of oregano, 1 tablespoon of sugar, and salt and pepper to taste.

13

Add 1/4 teaspoon of baking soda and stir, then add 2 tablespoons of chopped parsley and fresh basil.

14

Cook the sauce for about a minute, then set it aside.

15

In a large bowl, combine 2 pounds of lean ground beef, the cooked onions, and 1.5 cups of cooked white jasmine rice.

16

Season with 1/2 tablespoon of garlic powder, 1/2 tablespoon of Italian seasoning, and salt and pepper to taste.

17

Whisk 1 egg and add it to the mixture, then mix everything together with your hands.

18

Add a layer of sauce to the bottom of a baking dish.

19

Take a scoop of the filling and roll it into a log, then place it at one end of a cabbage leaf and roll it up, folding in the sides.

20

Place each cabbage roll seam-side down in the baking dish and pour the remaining sauce over the top.

21

Cover the dish with foil and bake at 350°F (175°C) for about 1 hour and 45 minutes.
