Arrowroot is a gluten-free thickener.
Peel and slice the apples into large chunks, using 8 large granny smith apples or 12 smaller ones.
If desired, toss the peeled apples with a splash of lemon juice to prevent browning.
In a saucepan, add 3/4 cup packed brown sugar and 1/4 cup butter, chopped into smaller pieces.
Add 3 teaspoons of cinnamon to the saucepan.
Place the saucepan on the stovetop over medium-high heat and stir occasionally until the butter melts and a syrup forms.
Cook the apples on medium-high heat, stirring occasionally, until they are barely tender, as they will cook more in the oven.
Prepare a slurry by mixing 2 tablespoons of cornstarch with 2 tablespoons of water in a bowl.
Once the apples reach the desired tenderness, pour the cornstarch slurry into the saucepan and let it bubble for 20-30 seconds to thicken the mixture.
Remove the saucepan from heat once the syrup has thickened and the apples are at the perfect tenderness.
