Dark Chocolate Fruit & Nut Bites

1 cup dark chocolate chips
1/2 cup toasted almonds
1/2 cup pistachios
1/2 cup dried cranberries
1/4 cup shredded coconut (optional)
1/2 tsp sea salt

Break the chocolate into small pieces and place in a microwave-safe bowl.

Melt the chocolate for 30 seconds, stir, and continue melting and stirring at 30-second intervals until smooth.

Roughly chop the toasted almonds and pistachios, and keep them aside.

Line a baking sheet with parchment paper.

Spread the melted dark chocolate, shaping them into small discs.

Sprinkle the chopped nuts and cranberries evenly over the melted chocolate discs.

Place the tray in the refrigerator to cool for at least an hour until the chocolate has set.

Once set, peel them off the parchment sheet and they're ready to serve.
