In a bowl, add 2 types of flour (0000 and Manitoba).

Crumble in fresh Brewer Yeast and add sugar.

Pour in half of the water and mix using a pastry scraper, gradually adding more water until the yeast is absorbed.

Add salt and the rest of the water, mixing well.

Add olive oil and mix until the bowl is clean, then transfer the dough to a worktop.

Form the dough into a sausage shape and cut into pieces of around 80g each.

Flatten each piece slightly, bring the edges into the center, and twirl with the palm of your hand to form balls.

Place the balls on a tray, cover with a towel, and let them double in size.

Prepare the filling by cutting mozzarella into chunks and letting it drain.

Cook the sauce by heating oil in a saucepan, adding tomato puree, seasoning with salt, and cooking for about 15 minutes.

Transfer the sauce to a bowl, add dried oregano, and stir to cool.

Roll out the dough on a floured surface to about 2mm thick and cut into circles.

Place a spoonful of sauce and a few chunks of mozzarella on each circle, fold over, and seal the edges with a pastry cutter.

Heat oil to 170°C and fry the panzerotti, turning them until they float and are golden brown.

Drain on paper towels and serve hot.
