Curry Mango and Lime Chicken Skewers

Remove the cheeks of the fresh mango by slicing down either side of the seed.

Score the mango flesh to make it easier to pop out.

Pop the mango flesh into a food processor and blitz until it becomes a puree.

Add 1 cup of Greek yogurt into the mango puree.

Add 2 heaping tablespoons of yellow curry paste to the mixture.

Squeeze the juice of 1 fresh lime into the mixture.

Add a good pinch of salt and some black pepper.

Mix all the ingredients together until well incorporated.

Cover the marinade with glad wrap and refrigerate for at least half an hour.

Thread the marinated chicken onto skewers.

Grill the skewers until cooked through.

Serve the skewers over a bed of microwave coconut chili and lemongrass rice.

Squeeze lime juice over the skewers before serving.

Garnish with fresh coriander.
