In the bowl of a stand mixer, combine 2 cups fine semolina, 1 cup all-purpose flour, 1 whole egg, 1 egg white, 1/4 cup granulated sugar, and 1/4 cup vegetable oil.
Add 1 tablespoon dry active yeast and 1 cup milk, mixing with a hook attachment.
Scrape down the sides of the bowl as needed.
Add salt and then gradually add 1 cup water.
Switch from the hook attachment to the flat beater as the dough becomes less heavy after adding water.
Add nigella seeds and continue mixing for a total of about 15 minutes.
Cover the dough with plastic wrap and a kitchen towel, letting it rise until doubled in volume.
Put the dough in a baking pan lined with parchment paper and spread it evenly.
Cover and let it rise again until almost doubled in volume.
Gently brush the top with egg wash and sprinkle nigella seeds on top.
Bake in a preheated oven at 375°F for about 15 to 20 minutes, placing under the broiler for the last 5 minutes if desired.
Let cool slightly before cutting.
