In a food processor, add all-purpose flour, salt, and sugar; pulse to combine.
Cut cold butter into smaller cubes and add to the processor; scatter evenly over the flour mixture.
In a small bowl, whisk together milk and 1 large egg until well combined.
Pulse the food processor until the butter is the size of peas.
Transfer the mixture to a large bowl; it should have pea-sized pieces.
Add the egg and milk mixture to the bowl and stir with a spatula until combined.
Transfer the dough to plastic wrap, shape into a disc, and wrap tightly; refrigerate for about 2 hours.
Roll out the chilled dough on a floured surface, maintaining a rectangular shape.
Square off the edges of the dough using a bench knife or pizza cutter.
Cut the dough into rectangles, approximately 3x4 inches, using a ruler for even sizing.
Take blackberry jam (or any preferred filling) and place it on half of the rectangles.
Make an egg wash by whisking a whole egg in a bowl.
Brush the egg wash on the edges of the bottom rectangles.
Press the top rectangles onto the bottom ones, sealing the edges.
Pierce the tops with a fork to allow steam to escape and crimp the edges to seal.
Apply a final coat of egg wash on top for gloss.
Chill the pastries in the refrigerator for about 30 minutes.
Preheat the oven to 350°F (175°C).
Bake the pastries for 20-25 minutes until golden brown.
