Preheat the oven to 350°F (175°C).
Measure 3/4 cup of vegetable shortening (Crisco) using three 1/4 cups, packing it down and leveling it off.
Measure 1/2 cup of white sugar and 1/2 cup of packed brown sugar, packing the brown sugar tightly into the cup.
In a large mixing bowl, combine the shortening, white sugar, brown sugar, and 1 egg. Mix until well combined.
Add 1/4 cup of water and 1 teaspoon of vanilla extract to the mixture and mix until light and fluffy, scraping down the sides as needed.
In a separate bowl, combine 1 cup of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Stir to mix.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in 2 cups of old-fashioned oats and 1 cup of raisins until evenly distributed.
Drop spoonfuls of dough onto a baking sheet lined with parchment paper or a silicone mat, spacing them closely together.
Bake in the preheated oven for 8 to 10 minutes until the edges are golden brown.
Remove from the oven and let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
