2 cups onions, chopped
2 tablespoons vegetable oil
1 teaspoon thyme
2 bay leaves
1 teaspoon star anise seeds
1 stick cinnamon
1 black cardamom pod
1 teaspoon turmeric powder
1 teaspoon cardamom powder
1 tablespoon garam masala
1 teaspoon cumin
1 teaspoon coriander powder
1 teaspoon chili powder
1 tablespoon crushed ginger
1 tablespoon crushed garlic
2 cups tomatoes, diced
5 curry leaves
1/4 cup fresh coriander, chopped
2 cups boiling water
1 cup peas
1 teaspoon salt

Remove the duck from the packaging and rinse it.

Remove the skin of the duck to eliminate hair.

Peel and chop the onion.

Blend or grate the tomatoes.

In a 30 centimeter AMC pot, heat vegetable oil over medium-high heat.

Add the chopped onions, thyme, bay leaves, star anise seeds, cinnamon sticks, and black cardamom pod. Mix well.

Sauté the onions until translucent.

Add turmeric powder, cardamom powder, garam masala, cumin, coriander powder, chili powder, crushed ginger, and crushed garlic. Mix well until combined.

Add the duck and salt to taste, mixing until the duck is coated in the spices.

Cover with a lid and allow the duck to seal in the spices for 10 minutes.

After 10 minutes, stir the mixture and add the blended tomatoes, curry leaves, freshly chopped coriander, and a little boiling water. Mix everything well.

Cover with the lid and cook until the duck is soft, which could take 30 minutes to 3 hours depending on the toughness of the duck.

Check if the duck is cooked by ensuring a knife can easily go through the wing.

(Optional) Add peas and mix well, covering to cook for about 5 to 10 minutes or until the peas are soft.

Once the peas are soft, stir the curry, turn off the heat, and plate the dish.
