You can use homemade rolls or store-bought baguette.
For the rolls, combine 3 and 1/2 cups flour, 1 egg, 1 egg yolk, 3 tablespoons softened butter, 2 tablespoons yogurt, 2 teaspoons salt, and 1 teaspoon sugar in a bowl.
Heat about 200 mL of water to 112-115°F and dissolve 1 packet of dry yeast in it.
Let the yeast sit until foamy, then add it to the flour mixture and mix until incorporated.
Knead the dough by hand for about 5 minutes until smooth, then cover and let rise in a warm place for about 1 hour.
Prepare the filling by peeling mushrooms and slicing them thinly, and slicing half a sweet onion.
Sauté the onions in butter for a couple of minutes, then add the mushrooms, salt, and pepper.
Cook on medium-high heat to evaporate the water released by the mushrooms, adding additional flavoring like Maggi if desired.
Check the dough after an hour; it should have doubled or tripled in size.
Dust a board with flour and form the dough into rolls weighing about 100 g each.
Cover the rolls and let them rise for another 30 minutes.
Preheat the oven to 375°F and bake the rolls for 15-20 minutes until done.
Once the rolls are baked, let them cool slightly before adding the mushroom filling and cheese on top.
Optionally, add toppings like ham, tomatoes, avocado, or pickles before putting them back in the oven for a few minutes to melt the cheese.
