Today, they are enjoyed across the UK and beyond, often served with butter or as a base for toppings like cheese or smoked salmon.

Peel and chop 1 potato.
Cook the potato in salted boiling water until tender, then drain.
Mash the potato using a masher or ricer.
Add butter to the hot mash so it melts through.
Optionally, add a dash of cream.
Add self-raising flour at a ratio of 2 to 1 based on the weight of the potato mixture.
Season with white pepper and combine the mixture.
Roll out the dough on a floured surface until it's 0.5 cm thick.
Cut the dough into desired shapes (triangles, squares, etc.).
Add a knob of melted butter to a pan over medium to high heat.
Cook the scones for approximately 5 minutes on one side and 4 minutes on the other side.
Repeat until all the mixture is used.
