Preheat oven to 350°F.

Spray an 8x11 baking pan with Baker's Joy and set aside.

In a large mixing bowl, add 2 cups of flour, 1/2 teaspoon of salt, and 2 teaspoons of baking soda, and whisk together.

Add 1 (20 oz) can of crushed pineapple (do not drain), 2 eggs, 1.5 cups of sugar, and 1 teaspoon of vanilla to the mixing bowl and stir until combined.

Pour the batter into the prepared baking dish, ensuring to leave some pockets of flour if present.

Place the baking dish in the oven and bake for 30 to 35 minutes.

While the cake is baking, prepare the frosting by adding 1 stick of butter, 1 cup of white sugar, and 3/4 cup of evaporated milk to a saucepan and bring to a boil.

Boil the frosting mixture for 5 minutes, then remove from heat and stir in 1.5 cups of toasted coconut and 1 cup of toasted pecans.

Once the cake is out of the oven, poke holes in it in a grid pattern.
