Traditionally served at family gatherings, it showcases the vibrant flavors of Caribbean cuisine. Today, this dish has gained popularity beyond Jamaica, with variations appearing in Caribbean restaurants worldwide.

Remove peas from the pod and prepare for cooking.
Place a pot with boiling water over medium flame.
Add ½ teaspoon of salt to the boiling water.
Add the green peas to the pot.
Boil the green peas for around 5 minutes until cooked.
Check the peas by squeezing one; if it mashes easily, it's done.
Drain off the water from the cooked peas.
Prep fresh ingredients: chop red capsicum, onion, garlic, and carrots, and chop smokeokies into bite-sized pieces.
Pick a large pot and place it over medium flame.
Add 2 tablespoons of cooking oil to the pot.
Once the oil is hot, add in 1 medium diced onion and sauté for around 1 minute until soft and golden brown.
Add 5 cloves of minced or grated garlic and sauté for an additional 30 seconds to 1 minute.
Add 1 teaspoon of peri seasoning, 1 teaspoon of garlic powder, and 2 seasoning cubes to the pot and toss together with the onions and garlic.
Add in the prepped carrots and stir.
Add the boiled green peas and chopped smokeokies to the pot and stir everything together.
Add a heap teaspoon of tomato paste and stir in; fresh tomatoes can also be added.
Add the soaked rice to the pot and toast it with the other ingredients for around 1 minute.
Add 3 cups of water to the pot and stir everything together.
Wait for the mixture to come to a boil and check the seasoning, adding more salt if necessary.
Once the water has evaporated, reduce the flame to low and add in the chopped red capsicum.
Cover the pot and steam the rice for 5 minutes.
After 5 minutes, check on the rice and fluff it gently with a fork.
Add chopped coriander for flavor before serving.
