gluten-free all-purpose flour

Almond flour is lower in carbs, but regular flour is cheaper and not gluten-free.
Cream the butter and granulated sugar on medium speed in a large bowl.
Add the egg, milk, vanilla extract, salt, and a touch of cinnamon, mixing until fluffy and well combined.
Add gluten-free flour to the mixture. If the flour doesn't contain xanthan gum, add it at this step.
Wrap the cookie dough in plastic wrap and refrigerate for about 1 hour to firm it up.
Preheat the oven to 350°F (175°C).
Roll out the chilled dough on a flat surface, using additional gluten-free flour to prevent sticking, to about 1/4 inch thick.
Use cookie cutters to cut out shapes from the rolled dough.
Transfer the cut-out cookies onto a parchment-lined baking sheet.
Bake in the preheated oven for about 10 to 12 minutes, until the edges are golden brown and the cookies are solid.
Allow cookies to cool to room temperature before frosting.
