This dish was a way for Irish immigrants in America to celebrate their heritage, often served alongside cabbage and potatoes. Today, corned beef is enjoyed year-round, especially in the U.S., where it has become a staple for festive occasions and comfort food.

Start by preparing the corned beef brisket, which is a 4-pound flat cut.
Remove the brisket from its packaging and take out the seasoning packet that comes with it.
Decide whether to rinse the brisket to reduce saltiness; the creator chooses not to rinse it.
Place the brisket into the slow cooker (crock pot).
Sprinkle the brisket with the seasoning packet, which contains mustard seed, coriander seed, allspice, bay leaf, and cloves.
Prepare the vegetables: scrub the yellow Yukon and red baby potatoes clean and leave them whole, then add them to the crock pot.
Peel the carrots, cut off the ends, and leave them whole before adding them to the crock pot.
Cut the large onion into eight chunky pieces and add it to the crock pot.
Add 4 cups of beef broth to the crock pot.
Slice the cabbage into quarters but do not add it yet; it will be added halfway through the cooking process.
Cook the brisket on low for about 10 hours or on high for 4 to 6 hours, checking for tenderness.
Halfway through cooking, add the cabbage to the crock pot.
After cooking for about 6.5 hours on high, check that the brisket is fork-tender and the vegetables are soft.
Remove the corned beef brisket and vegetables from the crock pot to serve.
