Peel the plantains and remove the skin.

Cut one plantain into round slices and dice the other plantain.

Add 1 teaspoon of olive oil to the plantain mixture and mix gently.

Place the plantains in an actifry and air fry for about 10 minutes.

Chop the vegetables into small pieces.

Break the eggs into a bowl and whisk them.

Fry the onions in the sardine oil until transparent.

Add the remaining vegetables and stir until the bell peppers are half cooked.

Add white pepper, ginger, garlic, and curry powder to the pan and mix well.

Season with vegetable bouillon powder (which contains salt).

Add the sardines (or tuna) to the mixture and stir gently.

Combine the egg mixture with the vegetable and sardine mixture.

Grease the muffin tray with olive oil.

Scoop the mixture into the muffin tray and place the round plantain slices on top for decoration.
