Cultural Context

Hallacas are a traditional Venezuelan dish, often associated with Christmas celebrations. They are a symbol of family unity, as families gather to prepare them together, each contributing their own unique touch to the filling. While hallacas can be found year-round, they hold a special place during the holiday season, showcasing the rich culinary heritage of Venezuela. Today, variations exist across Latin America, with each country adding its own twist to the concept of a wrapped savory filling.

1

Prepare to make hallacas with the ingredients listed.

2

Gather 1 kg of plátano, a bag of white corn flour, oil, raisins, pitted olives, capers, 1 head of garlic, 1 lb green onions, 1 lb yellow onion, 1 bell pepper, 1 carrot, butcher twine, and spices.

3

For spices, use 2 tsp oregano, 2 tsp paprika, 2 tsp cumin, 2 tsp thyme, and bay leaves.

4

For the meat, use 2 pieces for the dough, 4 pieces for the filling, and 2 pieces for cooking.

5

Melt 250 g of butter and mix with 1 lb of beef and 1 kg of pork, with 1 lb of soaked chickpeas.

6

Heat 2 liters of water and add the butter and pork fat until it melts.

7

Add 2 tsp of salt to the boiling water.

8

Once the water is boiling, add the achiote to color the water.

9

Stir the mixture until it turns a beautiful red color, then strain it into the water for the dough.

10

Add 2 tsp of garlic powder to the mixture.

11

Chop the vegetables: green onions, yellow onion, bell pepper, and carrot, and mix them into the meat.

12

Let the meat marinate overnight for better flavor, if possible.

13

Prepare the banana leaves by cleaning them and cutting them to size, ensuring they are large enough to wrap the hallacas.

14

Mix the chopped vegetables into the meat mixture and season to taste with the spices.
