Toast the arborio rice in the butter until the rice is coated and the middle is white, about 30 seconds.

Deglaze the pan with a little white wine.
Add warm chicken stock in stages, stirring until creamy; adjust the amount based on consistency.
Add saffron to the rice and stir until it starts to bleed yellow.
Season with salt and black pepper to taste.
Finish with remaining butter and half of the parmesan cheese, stirring to combine until creamy.
Serve immediately while still a little runny and al dente.
