Today, it is a beloved dessert not just in Spain but has also inspired variations around the world, showcasing the rich culinary heritage of Catalonia.

Separate the egg yolks from the egg whites.
Add 1/4 cup of sugar to the egg yolks and mix well to dissolve the sugar.
Add 2 cups of milk, 1 tbsp of corn starch, and some lemon peel to a pot.
Add 1 tsp of cinnamon powder to the milk mixture.
Remove 1/4 cup of milk and pour it into the egg mixture to temper the eggs.
Strain the egg mixture back into the pot with the milk mixture.
Cook the mixture on the stove, stirring constantly to prevent sticking.
Add the vanilla bean and its seeds to the mixture.
Pour the mixture into bowls and refrigerate for about 4 hours, covering with Saran Wrap.
Remove the Saran Wrap and sprinkle a thin layer of sugar on top of the chilled mixture.
Use a butane torch to caramelize the sugar on top, moving in a circular motion.
Let the caramelized sugar cool for about 5-6 minutes before serving.
