Combine 160 grams of egg yolks with 150 grams of sugar and 40 grams of corn starch.
Mix well until a uniform consistency is achieved.
Boil 1 liter of whole milk with a cinnamon stick and orange zest.
Strain the milk mixture while pouring it into the bowl of egg yolks, sugar, and cornstarch mixture.
Mix well.
Cook with very low fire while stirring continuously to prevent boiling.
Put the mixture in a bowl where it will be served and sprinkle sugar on top.
Use a cooking torch to caramelize the sugar.
