Bring a pot of water to a boil. Make an X-shaped incision at the bottom of the whole fresh tomatoes and place them in the boiling water for 1 minute.

Remove the tomatoes and place them in a bowl of cold water to peel. Dice the peeled tomatoes and set aside.

In a pot, heat neutral oil over medium heat. Add the diced onions, carrots, red bell pepper, and grated potatoes. Stir until the onions become translucent, about 2 minutes.

Season with salt and add the diced potatoes and any optional vegetables that take longer to cook, such as cauliflower or squash.
