Dice a yellow onion, 3 medium carrots, 1 red bell pepper, and 2 potatoes. Grate 1 additional potato and set aside.
Bring a pot of water to a boil. Make an X-shaped incision at the bottom of the whole fresh tomatoes and place them in the boiling water for 1 minute.
Remove the tomatoes and place them in a bowl of cold water to peel. Dice the peeled tomatoes and set aside.
In a pot, heat neutral oil over medium heat. Add the diced onions, carrots, red bell pepper, and grated potatoes. Stir until the onions become translucent, about 2 minutes.
Season with salt and add the diced potatoes and any optional vegetables that take longer to cook, such as cauliflower or squash.
Cover with broth or water and bring to a boil, then reduce to a simmer. Let it simmer for 5 minutes.
Add the diced tomatoes and any quick-cooking vegetables like green beans or green peas. Simmer for an additional 10-15 minutes.
Taste the soup and season with salt to your desired level. Turn off the heat and add chopped parsley.
