Chop 2.5 cups of rhubarb and 2.5 cups of strawberries and add them to a pan.
Add 1/3 cup of white sugar, 1/3 cup of brown sugar, 1 tablespoon of orange juice, 1-2 teaspoons of vanilla, and a pinch of salt to the fruit.
Mash the strawberries and rhubarb while heating the mixture.
Bring the mixture to a boil and cook for 5-7 minutes until thick and bubbly.
Add 1/4 cup of corn starch to the mixture before boiling, if forgotten, add it before it boils.
Transfer the cooked filling to a bowl and refrigerate to cool.
Prepare the crust by crushing 1.5-2 cups of pecan shortbread cookies and mixing with 1/4 cup of melted butter.
Press the cookie mixture into a glass dish and bake at 350°F for 5-10 minutes until set.
Let the crust cool slightly after baking.
Prepare the cream cheese layer by beating 8 ounces of cream cheese in a bowl.
Gradually add 1 cup of powdered sugar to the cream cheese while mixing.
Fold in one tub of whipped cream into the cream cheese mixture until combined.
Spread the cream cheese mixture over the cooled crust evenly.
Stir the cooled strawberry rhubarb filling and spread it over the cream cheese layer.
Top with another container of Cool Whip.
Optionally sprinkle leftover cookie crumbs on top (if available).
Refrigerate the dessert for at least 2 hours, preferably overnight, before serving.
After chilling, consider adding crushed cookies or nuts on top for garnish.
