Start with 1 cup of butter and add 2 cups of sugar. Beat this well until combined.
Sift together 3 cups of cake and pastry flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.
Prepare 1 cup of milk at room temperature and add 1 teaspoon of vanilla extract to it.
Alternate adding the dry and wet ingredients to the butter and sugar mixture on a lower speed.
Whip 8 egg whites until they hold a stiff peak, then add them to the batter in two additions to lighten the mixture and increase volume.
Divide the batter into three greased and floured 8-inch round cake pans with parchment on the bottom.
Preheat the oven to 350°F (175°C) and bake the cakes for 30 minutes until golden brown and a skewer comes out clean.
Let the cakes cool in the pans for about half an hour before transferring them to a cooling rack to cool completely.
For the filling, melt 1/2 cup of unsalted butter in a saucepan, then add 1 cup of brown sugar and 8 egg yolks, whisking over medium heat for about 6 minutes.
Remove from heat and stir in 1 cup of lightly toasted pecans, 1 cup of raisins, 1 cup of sweetened flaked coconut, and 1/2 cup of diced candied orange peel, along with 1 teaspoon of vanilla extract.
Assemble the cake by placing the first layer on a cake wheel, spreading half of the filling on top, adding the second layer, then the remaining filling, and finally the last cake layer on top.
Prepare the meringue frosting by boiling 2/3 cup of water with 2 1/2 cups of sugar and 1/3 cup of corn syrup, using a candy thermometer to reach 240°F.
While the sugar mixture boils, whip 2 egg whites until soft peaks form, then slowly pour in the hot sugar mixture while continuing to whip.
Beat the meringue until it cools to just above room temperature, then add a splash of vanilla extract.
Spread the meringue frosting generously over the top and sides of the assembled cake, using gentle motions to smooth it out.
Let the frosting set for about an hour.
