Add minced garlic and sauté until fragrant, about 1 minute.
Add artichoke hearts to the skillet and season with salt and black pepper.
Pour in white wine and vegetable broth, then bring to a simmer.
Cover the skillet and cook for 15-20 minutes until artichokes are tender.
Uncover and sprinkle with bread crumbs, parsley, and mint.
Drizzle with lemon juice and red pepper flakes for added flavor.
Cook uncovered for an additional 5 minutes until the bread crumbs are golden.
Remove from heat and let cool slightly before serving.
