1/2 cup sugar
2 eggs
1 cup milk
1 tablespoon vanilla essence
2 cups self raising flour
96 raspberries

Preheat oven to 200C.

Butter a tray for muffins.

Cream the butter and sugar in a mixer or with a hand held mixer.

Alternate adding milk and flour to the mixture, mixing until the batter is soft and well combined.

Add vanilla essence and combine well.

Fill moulds in tray 3/4 full and place 4 raspberries on top of each, pressing down lightly.

Bake in a 180C oven for approximately 15 minutes or until golden.

Remove from tray and allow them to cool down.

Once completely cooled, dust with icing sugar.
