Cut 1 kg chicken breast fillet in half using a hammer or knife to make it thinner for the sandwich.
Marinate the chicken with 2 tablespoons sriracha sauce, 1 teaspoon garlic powder, 1 tablespoon peri peri sauce, 1/2 teaspoon chili powder, 1/2 teaspoon black pepper powder, 1/2 teaspoon salt, 1/4 teaspoon yogurt, and 3 tablespoons yogurt. Mix well and let it marinate for 1 hour or overnight.
Prepare coleslaw by finely chopping cabbage and carrots. Mix with 1/2 cup mayonnaise, 1 tablespoon hot sauce, 2 tablespoons powdered sugar, and 1/2 teaspoon black pepper. Mix well to complete the coleslaw.
Make mayo garlic sauce by mixing 1 cup mayonnaise, 1 tablespoon garlic powder, and 1 teaspoon black pepper, and 1 teaspoon oregano. Alternatively, fresh garlic can be used.
Prepare chili mustard sauce by mixing 1 tablespoon sriracha sauce, 1 tablespoon peri peri sauce, 1 cup chili garlic ketchup, and 2 tablespoons mustard powder or mustard sauce. Mix well.
Beat 3 eggs with 1/2 teaspoon black pepper and salt to taste. Heat 2 tablespoons oil in a pan and cook the omelet on low to medium flame until lightly browned. Flip to cook the other side.
Grill the marinated chicken in a grill pan with oil on low to medium heat until cooked through, ensuring good grill marks.
In another pan, heat 2 tablespoons oil and shallow fry the pepperoni slices on low to medium flame until ready.
Take sandwich bread slices and apply butter on them. Grill the bread slices in a grill pan with 1 tablespoon oil until grill marks appear on both sides.
Cut the grilled chicken into small bite-sized pieces.
Assemble the sandwich: On one slice of bread, spread chili mustard sauce, add a piece of omelet, cheese slice, and fried pepperoni slices. On another slice, spread mayo garlic sauce, add lettuce, cucumber slices, tomato slices, and the grilled chicken pieces. Top with the last slice of bread and add coleslaw on top.
Cut the sides of the sandwich if desired, and serve.
