Mix 1/2 cup of whole milk at around 98 degrees Fahrenheit with 1 tablespoon of instant yeast and let sit for about 10 minutes.
In a bowl, combine 2 and 1/4 cups of bread flour, 1 teaspoon of fine sea salt, and 2 tablespoons of granulated sugar.
In a small pot, whisk together 2 tablespoons of bread flour and 6 tablespoons of water to create a roux, cooking over medium heat until thick, then let cool.
With a stand mixer on low, add the milk-yeast mixture, 1 egg, 1 egg yolk, and the cooled roux, mixing for 2-5 minutes until smooth.
Add 2 tablespoons of softened butter, one tablespoon at a time, mixing for another 2-3 minutes until incorporated and smooth.
Shape the dough into a ball, place in an oiled bowl, cover with plastic wrap, and let rise for 1.5 to 2 hours until doubled in size.
Once risen, punch down the dough, divide into six pieces weighing 95-105 grams each, and shape into balls.
Place shaped dough on a parchment-lined baking sheet, cover, and let proof for 45 minutes to 1 hour in a warm area.
Brush the buns with an egg wash (1 egg + splash of water) and bake at 375 degrees Fahrenheit for 15-17 minutes, brushing with melted butter after baking.
Dice 2 whole onions and caramelize in a saucepan with 2 tablespoons of butter over medium heat for about 30 minutes, adding water if necessary.
In a bowl, mix 3/4 cup mayonnaise, 1/2 cup ketchup, 1/3 cup chives, 2 tablespoons Worcestershire sauce, a pinch of salt, 2 diced dill pickles, and the caramelized onions until combined.
Cut onions into 1/2 inch thick rings and sear in a pan coated with oil over medium-high heat until caramelized.
Divide 1 pound of ground beef into four balls, heat a cast-iron skillet until hot, and press each ball into a flat patty, seasoning with salt.
Sear patties for 2-3 minutes until caramelized, then flip, season again, and optionally baste with garlic, thyme, and butter.
Add a slice of cheddar cheese to one patty and a slice of Muenster or Monterey Jack to the other, melting as desired.
Toast the buns in a pan with 1 tablespoon of butter until golden brown.
Assemble the burger by spreading sauce on both toasted buns, adding a slice of tomato, iceberg lettuce, and the burger patties.
