Whole wheat flour adds fiber and nutrients.
Greek yogurt

Plain yogurt maintains similar texture with fewer calories.
Preheat oven to gas mark 5 (about 375°F).
Lightly dust a roasting tray with flour (or use baking parchment if available).
Weigh out the self-raising flour and add it to a mixing bowl.
Add about a teaspoon of salt to the flour.
Add half of a 500 gram tub of Greek yogurt to the flour and salt mixture.
Mix with a spatula until a loose, claggy dough forms.
Lightly dust a work surface and transfer the dough onto it.
Bring the dough together into a smooth ball, adding more flour if it becomes too sticky.
Knead the dough gently for a couple of minutes until soft.
Cut the dough into four pieces (or eight if making the full recipe).
Form each piece into a ball, the size of a bread roll.
Prepare an egg wash by beating one egg with a pinch of salt.
Brush the egg wash over the dough balls.
Optionally, sprinkle seeds (like fennel, poppy, or sesame) on top of the rolls.
Place the rolls in the oven and bake for 20 to 30 minutes, checking for doneness.
Once baked, transfer the rolls to a wire rack or plate to cool to room temperature.
