Peel 2 large ripe bananas and place them in a bowl.
Use a potato masher to mash the bananas until smooth.
Add melted butter to the mashed bananas and mix together.
Add brown sugar, sour cream, and homemade vanilla extract to the banana mixture and mix until thoroughly combined.
Sift in whole wheat flour, baking powder, baking soda, cinnamon, and salt into the wet mixture.
Stir the dry ingredients into the wet mixture until just combined, being careful not to over mix.
Fold in walnuts, reserving some to sprinkle on top before baking.
Pour the batter into a greased loaf pan, ensuring to get every last bit of the mixture in the pan.
Sprinkle reserved walnuts on top of the batter.
Bake in a preheated oven at 350°F for 40 minutes.
After 40 minutes, test with a toothpick; if it comes out wet, cover the loaf with foil to prevent over-browning and bake for an additional 20 minutes.
Test again with a toothpick to ensure it's done; it should come out clean.
Let the bread cool on a wire rack.
