Edamame offers similar texture and nutrition, while green peas are often more affordable.

1

Transfer 1 tbsp flour into a big bowl.

2

Add 4-5 cups water on top, making sure to beat with a wire whisk, so there are no lumps.

3

Cut off both ends of the beans, remove any strings then cut into 2-3 pieces and transfer into the floury water, to prevent them from getting dark.

4

Heat olive oil in a big pan over medium heat, add the onions.

5

Add a pinch of salt and black pepper, then saute until the onions are tender for about 5-6 minutes, stirring occasionally.

6

Then add 1 real teaspoonful flour and cook for about 1 minute, stirring constantly.

7

Add the drained and rinsed broad beans.

8

Season to taste and add 1/2 tsp sugar, mix.

9

Make sure to scrape the bottom of the pan.

10

Then slowly add 4 cups water, stirring constantly and bring to a boil, over medium high heat.

11

Mix and check for seasoning.

12

Reduce heat to medium low, cover and cook for about 1 hour or until very tender.

13

Check for doneness then turn off the heat.

14

Add chopped dill and mix gently.

15

Transfer into a serving plate.

16

Last but not least, place 2-3 spoons yogurt on top, then you may serve it hot, warm or cold.
