Preheat the oven to 375°F (190°C).
In a bowl, mix feta cheese, ricotta cheese, egg, chopped parsley, salt, and black pepper until well combined.
Lay a sheet of phyllo dough on a clean surface and brush lightly with olive oil or melted butter.
Place another sheet of phyllo on top and brush again with oil or butter.
Spoon a portion of the cheese mixture along one edge of the phyllo dough.
Roll the dough over the filling to form a log, then coil it into a spiral shape.
Repeat the process with remaining phyllo and filling, placing spirals on a baking sheet lined with parchment paper.
Brush the tops of the burek with more olive oil or melted butter.
Bake in the preheated oven for 30-35 minutes, until golden brown and crispy.
Remove from the oven and let cool slightly before serving.
Serve warm with yogurt on the side.
