Chop half a cup of Italian parsley finely.
Slice half a shallot and preheat a pan over medium heat.
Add about 1 tablespoon of extra virgin olive oil to the pan and sauté the diced shallots until well caramelized.
In a mixing bowl, combine 1 pound of ground turkey breast, 2 whole eggs, 2 tablespoons of a secret ingredient, 1 tablespoon of hot sauce, the caramelized shallots, 1/2 cup of chopped Italian parsley, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 tablespoon of smoked paprika, 1 tablespoon of black pepper, and about 1 tablespoon of salt.
Add 1 tablespoon of liquid smoke and mix everything together until well incorporated.
Slowly incorporate 1 cup of Italian bread crumbs into the mixture until the desired consistency is reached.
Roll the mixture into 2.5-ounce balls, using two balls for each burger, and let them rest in the fridge for 10 minutes.
In a mixing bowl, prepare the burger sauce by combining 1/2 cup of mayonnaise, 2 tablespoons of French dressing, 4 tablespoons of dill pickled relish, 1 tablespoon of sriracha, 1 teaspoon of white vinegar, 1/2 teaspoon of sugar, 1 teaspoon of onion powder, and a pinch of salt. Whisk until well combined.
Toast the brioche buns in a cast iron pan until golden brown, toasting the bottom as well.
Cook 4 slices of turkey bacon in the pan until crispy, adding a little extra virgin olive oil when flipping them over.
After 10 minutes, remove the turkey burger balls from the fridge and press them into even patties.
Place a stack of 4 slices of pepper jack cheese in the center of one patty, then cover with another patty, sealing the cheese inside.
Preheat the cast iron pan over medium-high heat and add 1-2 tablespoons of extra virgin olive oil.
Add the Juicy Lucy turkey burger patties to the pan and cook for about 5 minutes on one side.
Flip the burgers and cook for an additional 5 minutes or until they reach an internal temperature of 165°F.
Stand the burgers up in the corners of the pan to get the edges golden brown.
Add another slice of pepper jack cheese on top of each burger, cover with a lid to melt the cheese.
Assemble the burgers on the toasted buns with romaine lettuce, red onions, tomatoes, the Juicy Lucy turkey burger patty, and about 1.5 teaspoons of burger sauce on the top bun, followed by pickles and crispy turkey bacon.
Top with the crown of the bun, slice down the middle, and serve.
