In a large bowl, mix 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt.
Stir to mix all of the dry ingredients together.
In a separate large bowl, mash 3 ripe bananas using a fork.
Cream together 1/2 cup of unsalted butter with 3/4 cup of packed brown sugar using a hand mixer or spatula.
Add 2 large eggs at room temperature, one at a time, to the butter mixture and mix well.
Add the mashed bananas and 1 teaspoon of vanilla extract to the butter mixture and mix until combined.
Gradually add the dry ingredients to the wet mixture using a spatula to avoid overmixing.
Fold in 1 cup of pecans (or walnuts or raisins, if desired).
Grease a standard 9x5 loaf pan with oil spray or butter.
Pour the batter into the prepared loaf pan and smooth the top.
Bake at 350°F for about 60 minutes or until a toothpick inserted in the middle comes out clean.
Let the banana bread rest and cool for about 10 minutes before slicing and serving.
