Preheat the oven to 180°C (350°F).
Break 5 eggs into a mixing bowl and add 1 cup of plain non-fat Greek yogurt.
Add 1 teaspoon of vanilla extract and 3 squirts of stevia extract to the bowl.
Add a pinch of pink salt to balance the sweetness of the stevia.
Add 1 teaspoon of baking soda and 1 teaspoon of cream of tartar to the mixture.
Grate the zest of 1 orange into the mixture, avoiding the white part.
Blend all the ingredients together until smooth before adding the flours.
Add 2 cups of blanched almond flour and 1/2 cup of arrowroot flour to the blended mixture and mix until combined.
Spread the batter thinly on a parchment-lined cookie sheet.
Bake in the oven for 18 minutes, checking around 15-16 minutes for doneness.
While the cake is baking, prepare the berry sauce by adding 1 cup of blueberries and 1 cup of mixed berries to a saucepan.
Add 2 tablespoons of sweetener to the berries and cover the saucepan, cooking on medium heat.
Lower the heat and stir the berries as they cook down into a sauce.
In a separate bowl, prepare the whipped cream by adding 1/2 pint of heavy whipping cream and 4 oz of mascarpone cheese.
Powder 1/4 cup of sweetener using a blender and add it to the cream mixture along with 1 teaspoon of vanilla extract.
Mix the cream mixture on high speed until well combined and fluffy.
