2 tablespoons fresh rosemary, chopped
1 star anise
4 cloves of garlic, minced
1 teaspoon chili flakes
1 tablespoon sugar
1 tablespoon salt
1/2 cup fresh orange juice
1 tablespoon orange zest
1 tablespoon cider vinegar
1 cup chicken stock
4 cups root vegetables (carrots and potatoes, chopped)
1/4 cup parmesan, grated
2 cups polenta

Tie the pork butt to keep it uniform.

Make a brine by combining pure maple syrup, water, smashed ginger, fresh sage, fresh rosemary, star anise, cloves of garlic, chili flakes, sugar, salt, and fresh orange juice in a pot.

Bring the brine to a boil, then cool it down.

Add the pork to the cooled brine and let it sit for four hours, preferably overnight in the refrigerator.
