Preheat the oven to 175°C (350°F).
Butter two 8-inch round cake pans, line them with parchment paper, and lightly flour them.
Measure out and prepare all ingredients before starting the mixing process.
Sift together cake flour, baking powder, and salt, then set aside.
In a mixing bowl, beat together unsalted butter and vegetable oil for a few minutes using a paddle attachment.
Gradually add sugar and beat until the mixture is light and fluffy, scraping down the sides of the bowl.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract.
Alternately add the dry ingredients and whole milk, starting and ending with the dry ingredients, mixing until just combined.
Stop mixing while there is still a bit of flour visible, then gently fold the batter with a rubber spatula.
Divide the batter evenly between the prepared cake pans and bake for 40 to 45 minutes, or until a skewer inserted into the center comes out clean.
Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
While the cakes cool, prepare the Chantilly cream by whipping together mascarpone cheese and cream cheese until light and fluffy.
Add icing sugar and whip again until combined.
Add cold thickened cream and vanilla extract, whipping until smooth and fluffy, being careful not to overwhip.
Prepare the berry layer by mixing strawberries, blueberries, and raspberries with lemon zest and a squeeze of lemon juice.
Level the cake layers for even stacking.
On the first layer, spread a generous amount of Chantilly cream, followed by a thin layer of microwaved strawberry jam (cooled).
Top with the prepared berries, then repeat with the second layer.
Frost the entire cake with more Chantilly cream and decorate the top with leftover mixed berries.
