Poached Shrimp

2 cups Spectrum organic extra virgin Mediterranean olive oil
garlic cloves
1/2 pound shrimp
lettuce

Pour 2 cups of Spectrum organic extra virgin Mediterranean olive oil into a skillet.

Remove the skins from garlic cloves and add them to the olive oil.

Place the skillet into the oven at 200°F.

Let the garlic infuse in the oil for at least 1 hour, preferably 3 hours.

Once the garlic is golden brown, add 1/2 pound of shrimp to the olive oil.

Return the skillet to the oven at 200°F for 10 minutes to poach the shrimp.

While the shrimp is cooking, roughly chop some lettuce and place it in a big bowl.

Drizzle some of the cooking oil over the salad and add the crispy garlic cloves.

Add a splash of spectrum organic balsamic vinegar to the salad and toss it together.

Plate the salad and shrimp, and serve with a big hunk of crusty bread.
