Ingredients

  • 4 large eggs
  • 1 can (4 oz) sardines in olive oil
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. 1Open the can of sardines and drain the oil, reserving it for later use.
  2. 2In a bowl, crack the eggs and whisk them until well combined.
  3. 3Heat a non-stick skillet over medium heat and add the reserved olive oil from the sardines.
  4. 4Once the oil is hot, pour in the whisked eggs and let them sit for a few seconds without stirring.
  5. 5Gently stir the eggs with a spatula, allowing them to cook slowly and evenly.
  6. 6When the eggs are about halfway cooked, add the sardines to the skillet, breaking them into smaller pieces if desired.
  7. 7Continue to cook, stirring gently, until the eggs are fully cooked but still soft and creamy.
  8. 8Season with salt and black pepper to taste.
  9. 9Remove from heat and sprinkle with chopped parsley if using.
  10. 10Serve immediately, either on its own or with toast.

  • 100g misua noodles
  • 2 cups water
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 tablespoon soy sauce
  • 1 tablespoon cooking oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 green onion, chopped (for garnish)

Instructions

  1. 1Heat the cooking oil in a pot over medium heat.
  2. 2Add the sliced onion and minced garlic, sauté until fragrant and the onion is translucent.
  3. 3Add the diced tomato and cook until softened.
  4. 4Pour in the sardines with the tomato sauce and soy sauce, stir gently to combine.
  5. 5Add the water and bring to a boil.
  6. 6Once boiling, add the misua noodles and cook for about 2-3 minutes until they are soft.
  7. 7Season with salt and black pepper to taste.
  8. 8Remove from heat and let it sit for a minute to cool slightly.
  9. 9Serve hot, garnished with chopped green onions.
