red kidney beans

Wash the red kidney beans to remove any debris or bad beans.
Place the washed beans in a large pot and add 14 cups of water.
Cover the pot and set it to cook on high heat.
While the beans are cooking, chop one whole onion roughly.
Peel the garlic cloves by smashing them with a knife and chop them finely.
In a separate pan, heat 4 tablespoons of canola oil over medium heat.
Add the chopped onion to the pan and fry for about 5 minutes until it starts to brown.
Add the chopped garlic to the pan and stir for 1-2 minutes to avoid burning.
Turn off the heat and transfer the onion and garlic mixture to the pot with the beans.
Add 1 tablespoon of salt to the pot and stir well.
Cover the pot and let it cook for 8 hours on high heat.
After about 4 hours, check the beans for softness and stir them occasionally.
Mash some of the beans against the side of the pot to create a creamy texture.
If desired, continue cooking for an additional hour to thicken the stew.
