Warm the milk in the microwave for about a minute and a half and set it aside.
Crumble the fresh yeast until it has the texture of breadcrumbs and set it aside.
Sift together the flour and sugar in a pile, then make an indentation in the center.
Add the butter cut into small pieces, the eggs, and the crumbled yeast into the indentation.
Slowly add the warm milk and vanilla extract, whisking the ingredients together.
Incorporate the flour into the wet ingredients using your hands until a dough forms, adding more flour if needed (about 2/3 cup extra flour).
Knead the dough for about 3 minutes until smooth.
Let the dough rest for about 30 minutes to an hour, covered with a warm, wet kitchen towel.
On a floured surface, roll out the dough to about 1 and 1/2 inches thick and cut into circles using a donut cutter.
Set the cut donuts aside to rise for about 1 hour.
Heat about 1 cup of vegetable oil in a large pan to 375°F.
Fry the donuts a few at a time for about 1 minute on each side, turning them every 30 seconds until golden brown and cooked through (about 2 minutes total).
Drain the donuts on paper towels and roll them in a mixture of granulated sugar and ground cinnamon while still warm.
