Roll out the dough on a floured surface until it's about three times the size of the butter in length.
Fold the dough over the butter, ensuring the butter is sealed inside the dough.
Squish the dough down with a rolling pin before rolling it out again to the same length as before.
Fold the dough again to create layers, then turn it for a book turn.
If the butter gets too warm, cover the dough and refrigerate it.
Continue to roll out and fold the dough until it has sufficient layers, then refrigerate until firm.
