1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
8 ounces green onion

Cut 8 ounces of bacon into pieces.

Cook the bacon in a skillet until crispy, rendering out the fat.

In a bowl, combine 2 cups of yellow cornmeal with 1 teaspoon of baking soda and 1 teaspoon of baking powder.

Add 2 teaspoons of kosher salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder to the cornmeal mixture.

Chop and add 8 ounces of green onion to the mixture.

Dump the cooked bacon and some bacon fat into the cornmeal mixture and stir to combine.

Start with some buttermilk and mix it into the batter until combined.

Heat a cast-iron skillet with the remaining bacon grease on the stove.

Press the batter into the skillet, cooking on one side until golden brown, about 7-8 minutes.

Flip the corn cakes and place the skillet in a preheated oven at 350 degrees for about 10 minutes to finish cooking.
