2 cups cornmeal
2 to 3 tablespoons unsalted butter
1/4 teaspoon baking powder
1 1/2 teaspoons salt
2 teaspoons sugar
1/2 cup shredded cheese (Kamath's New York extra sharp cheddar)
1 1/4 to 1 1/2 cups boiling water
canola oil (for frying)

Boil water in a pot.

In a bowl, combine 2 cups cornmeal, 1/4 teaspoon baking powder, 1 1/2 teaspoons salt, and 2 teaspoons sugar.

Add 2 to 3 tablespoons of unsalted butter to the dry ingredients.

Pour in about 1/4 cup of boiling water and mix with a spatula.

Continue adding boiling water until the mixture clumps together and holds form.

Add 1/2 cup of shredded cheese and mix lightly.

Heat about 1/2 inch of canola oil in a 12-inch cast iron skillet over medium heat.

Take about 2 tablespoons of the mixture in your palm and flatten it into a patty.

Carefully drop the patty into the hot oil.

Cook for about 4 to 5 minutes until golden brown, then flip to cook the other side.

Remove the cooked corn pone and let it cool on a plate.

Repeat the process until all the mixture is used.
