Mix the yeast and sugar in 1 cup warm water and let it proof.

In another cup, dissolve the salt in 1 tablespoon water and set aside.

In a large bowl, put 3 cups of sifted flour.

Add the yeast mixture and mix it with your hand.

Add the dissolved salt and mix.

Gradually add water while mixing until you obtain a very soft and a little sticky dough.

Place the dough in a bowl, cover with plastic wrap and a kitchen towel, and let it rise until doubled in volume.

Grease your hands with olive oil and deflate the dough.

Divide the dough into small balls and coat each ball with fine semolina.

Place the balls on a baking sheet lined with parchment paper, leaving space between them.

Roll out each ball of dough into a thin circle.

Cover with a kitchen towel and let rise until almost doubled in volume.

Bake in a preheated oven at 450°F for about 15 to 20 minutes.

Optionally, place under the broiler for a few minutes to achieve a golden color.

If the bread looks hard at the beginning, cover it with a kitchen towel for a couple of minutes to soften it.
