4 - 5 tomatoes, 500 g
1 onion, 100 g
2 hot green chilies
1 red paprika (optional)
4 cloves of garlic
Fresh parsley, chopped 1/2 cup
Pul biber (Turkish chili flakes or Aleppo pepper), 2 tbsp
Ground sumac, 2 tbsp
Dried mint, 2 tsp
Ground cumin, 1/2 tsp
Pomegranate molasses, 2 tbsp
Extra virgin olive oil, 3 - 4 tbsp
Salt, 1 tsp or to taste
Optional: Pomegranate seeds, chopped walnuts to garnish

Very finely chop the tomatoes and the onions with a mezzaluna or big chefs knife.

De-seed the chilies, paprika and very finely chop together with the parsley and garlic.

Add the chopped ingredients into a large mixing bowl.

Add 2 tbsp pul biber, 2 tbsp sumac, 2 tsp dried mint, 1/2 cumin and salt to taste.

Add 2 tbsp pomegranate molasses, 3 tbsp extra virgin olive oil and gently mix to combine.

Transfer into a serving plate and garnish with pomegranate seeds.

Chop the walnuts and garnish with chopped walnuts and drizzle extra olive oil.

Serve with fresh bread and enjoy!
