Combine 2 cups of flour, 1 tablespoon of sugar, and 1/4 teaspoon of active dry yeast in a mixing bowl.
Whisk the mixture together and add warm water until it becomes a thick paste.
Cover the mixture and let it sit for 1 hour to rise.
Blend 1 cup of blueberries with 1 tablespoon of lemon juice and 1 tablespoon of water until thick.
Add 1 teaspoon and a half of salt to the blueberry mixture.
Incorporate the remaining flour (2 cups) into the mixture, stirring with a wooden spoon or spatula.
Knead the dough until it is not sticky and smooth, adding more flour if necessary.
Cover the dough and let it rise for another hour.
Preheat the oven to 400°F.
Punch down the risen dough and divide it into 8 equal pieces.
Shape each piece into a ball and use a cookie cutter to create bagels, making holes in the center.
Boil water with honey and drop in the bagels, boiling for 40 seconds on each side.
Transfer the boiled bagels to a wire rack and apply an egg wash on top.
Place the bagels in the oven and pour water on a tray below to create steam.
Bake for 30-40 minutes, switching the trays halfway through to ensure even baking.
Remove the bagels from the oven and let them cool before serving.
