2 tbsp unsalted butter
½ small onion, finely chopped
350g/12oz mushrooms, cut into 5mm thick slices
2 garlic cloves, finely chopped
1/4 tsp dried thyme leaves
1/2 tsp cooking salt (kosher salt)
1/4 tsp black pepper
1/2 cup chardonnay or other dry white wine
1/2 cup salt-reduced chicken stock
2/3 cup thickened cream (heavy cream)
2 tsp chopped parsley, optional
