1

Bring a pot of water to boil.

2

Add 1/2 teaspoon of salt and 1 teaspoon of olive oil to the boiling water.

3

Add 900 g of gnocchi and cook for just 1 minute.

4

Drain the gnocchi and keep it aside.

5

In a blender, add 1 cup of ricotta cheese, 1/3 cup of Greek yogurt, 1 cup of fresh spinach, 2 basil leaves, 1/2 lemon juice, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of olive oil, and 4 tablespoons of pasta water.

6

Blend everything until smooth, glossy, and beautifully green.

7

Heat a pan and add a little olive oil.

8

Pour the green sauce into the pan and cook gently for 2 minutes.

9

Add fresh lemon zest to the sauce.

10

Add the cooked gnocchi straight into the sauce and toss everything together.

11

Let it cook for another 2 minutes so the gnocchi absorbs the flavors from the sauce.

12

Plate the dish and serve hot, finished with chili flakes, parmesan cheese, extra lemon zest, a drizzle of olive oil, and a few fresh basil leaves.
