180 g spaghetti
450 g cherry tomatoes
30 g olive oil
20 g butter
200 g pasta water
8 g garlic (2 medium cloves), grated finely
¼ tsp chili flakes
⅓ tsp salt
10 basil leaves, chopped

Wash the cherry tomatoes and dry them well.

Grate the garlic on a fine grater and set aside.

Fill a large pot with water, bring it to a boil, and add a tablespoon of salt.

Heat a pan to a bit above medium heat and add the olive oil and cherry tomatoes, allowing them to burst without stirring too much.

Once the tomatoes start sizzling, add the spaghetti to the boiling water.

Cook the spaghetti for 2 minutes less than the package instructions and save some pasta water before draining.

After 3–4 minutes, stir the tomatoes and add salt, chili flakes, and grated garlic, cooking for another 2–3 minutes.

Scoop out half of the tomatoes and press the remaining tomatoes to release their juices.

Pour in about 100 g of pasta water and add a few basil leaves, letting it simmer for a minute or two.

Transfer the undercooked spaghetti directly from the pot into the pan with the sauce.

Lower the heat and add the butter and a splash more pasta water, stirring until the sauce is creamy and emulsified.

Add the reserved cherry tomatoes back into the pan and mix gently.

Plate the pasta or add the burrata on top while still hot, allowing it to melt into the sauce.
