coconut cream

🥗Healthier: silken tofu

Silken tofu reduces calories while maintaining creaminess.

dark chocolate

🥗Healthier: dark chocolate chips

💰Cheaper: generic dark chocolate

Generic dark chocolate can lower costs without sacrificing flavor.

powdered sugar

🥗Healthier: coconut sugar

💰Cheaper: granulated sugar

Granulated sugar is often less expensive and works well in this context.

vanilla extract

💰Cheaper: vanilla essence

Vanilla essence is a more affordable alternative.

1

In a mixing bowl, combine vegan butter, corn syrup, and a pinch of salt. Mix until smooth.

2

Gradually add confectioner sugar, a spoonful at a time, whipping until fully incorporated and fluffy.

3

Add vanilla extract to the mixture.

4

Take out about a quarter cup of the mixture to color yellow for the centers, leaving the rest white.

5

Fill the chocolate mold with tempered chocolate or candy melts, filling the cavities to the top.

6

Flip the mold over to let excess chocolate drip out and scrape off the excess with a spatula for clean edges.

7

Once the chocolate has set, fill the half egg shells with a small piece of the white cream filling, being careful not to overfill.

8

Add a small piece of the yellow cream filling into half of the eggs.

9

Freeze the filled halves for about 5 minutes.

10

Stick the halves together by running one half over a warm saute pan to remelt some chocolate for adhesion.

11

Drizzle with white chocolate and sprinkle with Easter nonpareils for decoration.
